Silken Tofu Chocolate Mousse

Silken-Tofu-Chocolate-Mousse

Calling all chocolate lovers! If you want a dessert that tastes rich, creamy, and completely indulgent without requiring much effort, this Silken Tofu Chocolate Mousse is one you need to try. It has a thick, smooth texture, deep chocolate flavor, and comes together with surprisingly little work.

The idea for this mousse came from seeing how well silken tofu can work in sweet recipes. I was skeptical at first, because tofu isn’t exactly the ingredient you usually associate with chocolate mousse. But once blended with melted chocolate and cocoa powder, it creates an incredibly creamy dessert.

The best part is that the tofu flavor is very subtle, especially when you use good-quality chocolate and plenty of cocoa. If you’re unsure about tofu desserts, this recipe is an easy place to start.

Why You’ll Love This Vegan Chocolate Mousse

There are plenty of reasons this recipe deserves a spot in your dessert rotation.

  • Quick and easy: The mousse takes less than 10 minutes to prepare before chilling.
  • Rich and creamy: Silken tofu creates a smooth, thick texture similar to traditional mousse.
  • Chocolate-packed: Melted chocolate and cocoa powder give it plenty of deep chocolate flavor.
  • Vegan-friendly: There are no eggs, dairy, or gelatin when you use dairy-free chocolate.
  • Gluten-free: The basic recipe contains no gluten.
  • Protein-rich: Silken tofu adds protein that you wouldn’t normally get from a traditional chocolate mousse.
  • No complicated techniques: Everything comes together in a blender or food processor.

Ingredients for Silken Tofu Chocolate Mousse

Silken Tofu

Silken tofu is the secret to the creamy texture. It has a soft, custard-like consistency and a mild flavor, making it perfect for blending into desserts. It takes the place of heavy cream found in many traditional chocolate mousse recipes.

For the smoothest results, I recommend refrigerated silken tofu rather than shelf-stable tofu packed in an aseptic carton.

Semi-Sweet Chocolate

Melted chocolate gives this mousse its rich and decadent flavor. You can use dairy-free chocolate chips or a nondairy chocolate bar. Semi-sweet chocolate provides a nice balance, but dark chocolate works beautifully if you prefer a more intense flavor.

If using a chocolate bar, chop it into smaller pieces before melting so it melts evenly.

Cocoa Powder

Cocoa powder adds another layer of chocolate flavor and makes the mousse taste even richer. Dutch-process cocoa is my favorite because it has a smooth, mellow flavor, but regular natural cocoa powder can also be used.

Powdered Sugar

Powdered sugar adds sweetness and blends easily into the mousse without leaving a gritty texture. You can substitute it with maple syrup, agave, or another sweetener if preferred.

Vanilla Extract

A little vanilla enhances the chocolate flavor and adds warmth to the finished mousse. Vanilla bean paste is also an excellent option if you have some available.

Salt

A small pinch of salt helps balance the sweetness and brings out the flavor of the chocolate.

Instant Coffee

This ingredient is optional, but adding about a teaspoon of instant coffee can make the chocolate flavor taste deeper and more intense. It won’t necessarily make the mousse taste like coffee.

How to Make Silken Tofu Chocolate Mousse

1. Melt the Chocolate

Place the chocolate chips or chopped chocolate into a microwave-safe bowl. Heat in 30-second intervals, stirring between each one, until completely smooth.

You can also melt the chocolate using a double boiler if you prefer.

Allow the chocolate to cool slightly after melting.

2. Add the Tofu and Flavorings

Place the silken tofu, melted chocolate, vanilla extract, salt, and instant coffee, if using, into a blender or food processor.

Make sure the tofu is close to room temperature before adding the melted chocolate. Cold tofu can cause the chocolate to harden quickly, which may result in a grainy texture.

3. Add the Cocoa and Sweetener

Sift the cocoa powder and powdered sugar before adding them to the blender. This helps prevent little lumps from ending up in your mousse.

4. Blend Until Completely Smooth

Blend everything until the mixture is completely smooth and creamy. Stop occasionally and scrape down the sides of the blender or food processor so all the ingredients are evenly incorporated.

The finished mixture should look thick, glossy, and silky.

5. Chill the Mousse

Transfer the chocolate mousse into individual jars, small bowls, or one larger container.

Cover and refrigerate for at least 4 hours. Chilling allows the mousse to firm up and gives the chocolate flavor time to develop.

You can eat it immediately if you don’t mind a softer, pudding-like consistency, but the texture is much better after chilling.

6. Serve and Enjoy

Once chilled, spoon the mousse into serving dishes and add your favorite toppings. Fresh berries are one of my favorite options because their bright, slightly tart flavor works beautifully with the rich chocolate.

Tips for the Best Chocolate Mousse

Bring the tofu to room temperature. This is one of the most important steps. Cold tofu can cause the melted chocolate to solidify as soon as the ingredients are combined.

Use good-quality chocolate. Since chocolate is one of the main ingredients, its flavor will have a big impact on the finished dessert.

Sift the dry ingredients. Cocoa powder and powdered sugar can contain small lumps, so sifting helps create a smoother mousse.

Don’t skip the chilling time. The mousse becomes thicker and the chocolate flavor becomes more pronounced after several hours in the refrigerator.

Blend thoroughly. Keep blending until there are no visible pieces of tofu remaining. A high-speed blender or food processor works especially well.

How to Serve Silken Tofu Chocolate Mousse

There are so many ways to dress up this simple dessert. Try topping each serving with fresh raspberries, strawberries, blueberries, or another favorite fruit.

For a richer finish, drizzle peanut butter or almond butter over the top. A little flaky sea salt and chocolate shavings also make a beautiful combination.

You can add a spoonful of coconut whipped cream for an extra creamy finish, or sprinkle chopped nuts over the mousse for some crunch.

This Silken Tofu Chocolate Mousse is proof that tofu can do much more than savory dishes. With a handful of simple ingredients and a blender, you can turn it into a rich, creamy, chocolate-filled dessert that feels far more indulgent than the preparation suggests.

Storage Instructions

Dairy-free chocolate mousse keeps well in the fridge for up to 5 days in an airtight container (or multiple containers).

Don’t freeze it! The texture doesn’t hold up well to freezing and defrosting. It’ll be the best texture if you keep all of your leftovers in the fridge.

Silken Tofu Chocolate Mousse

This Silken Tofu Chocolate Mousse is rich, creamy, and incredibly easy to make. With no dairy, eggs, or cooking required, this decadent chocolate dessert comes together in about 10 minutes. Silken tofu creates a smooth, creamy base while semisweet chocolate and cocoa powder give every bite an irresistible chocolate flavor.

Prep Time: 10 minutes
Chill Time: 2 hours
Total Time: 2 hours 10 minutes
Course: Dessert
Servings: 6

Ingredients

  • 16 ounces silken tofu, room temperature or slightly warm
  • 6 ounces semisweet chocolate, chopped
  • ¼ cup powdered sugar, or 2 tablespoons maple syrup or agave
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 teaspoon instant coffee, optional
  • Pinch of sea salt

Optional Toppings

  • Coconut whipped cream
  • Fresh berries
  • Fresh mint leaves
  • Chocolate shavings

Instructions

  1. Make sure the silken tofu is at room temperature or slightly warm before blending. Cold tofu can cause the melted chocolate to firm up too quickly and create a grainy texture. If needed, warm the tofu briefly in the microwave.
  2. Place the chopped semisweet chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until completely melted and smooth. Set aside to cool slightly.
  3. Add the silken tofu to a food processor. Sift in the powdered sugar and cocoa powder, then add the vanilla, instant coffee if using, and sea salt.
  4. Blend until completely smooth and creamy, scraping down the sides as needed.
  5. Pour the slightly cooled melted chocolate into the tofu mixture and blend until fully incorporated and silky smooth.
  6. Taste the mousse and adjust the sweetness or salt if desired.
  7. Transfer the mousse to a covered container or individual serving dishes. Refrigerate for at least 2 hours, preferably overnight, until thickened and set.
  8. Serve chilled with coconut whipped cream, fresh berries, chocolate shavings, or fresh mint if desired.

Notes

  • For the smoothest mousse, use refrigerated silken tofu rather than shelf-stable tofu when possible.
  • The quality of the chocolate makes a noticeable difference in the final flavor. Semisweet chocolate works especially well, but you can use a combination of semisweet and bittersweet chocolate for a deeper chocolate flavor.
  • Instant coffee is optional, but a small amount helps enhance the chocolate flavor without making the mousse taste strongly of coffee.
  • A high-speed blender can be used instead of a food processor. Scrape down the sides frequently to ensure everything blends evenly.
  • Chilling overnight gives the mousse an especially thick texture and allows the chocolate flavor to develop.
  • Store covered in the refrigerator and enjoy chilled.
