Why I Love This Recipe
I love this vegan chocolate tofu pie because it delivers a rich, creamy chocolate dessert without requiring complicated ingredients or a lot of work. The silken tofu creates an incredibly smooth filling, while the dairy-free chocolate gives every bite a deep chocolate flavor. It is also a great make-ahead dessert because the filling firms up beautifully in the refrigerator.
Another thing I love is how easy it is to customize. Add coconut whipped cream, chocolate shavings, fresh berries, or your favorite vegan toppings to make it perfect for any occasion.
Ingredients
For the Chocolate Pie Filling
- 12 ounces soft or firm silken tofu
- 1 ½ cups dairy-free chocolate chips
- 2 tablespoons almond milk
- ½ cup granulated sugar
For the Crust and Topping
- 1 prepared vegan pie crust, homemade or store-bought
- Coconut whipped cream, homemade or store-bought
- Chocolate shavings, optional
Instructions
Prepare the Pie Crust
If you’re making a homemade vegan pie crust, prepare it according to the recipe instructions and transfer it to a pie pan. Cover the crust with foil and add pie weights, dried beans, or uncooked rice to keep it from puffing up during baking.
Bake at 350°F for 15 minutes. Carefully remove the foil and weights, then return the crust to the oven for another 5 minutes. Once finished, remove it from the oven and let it cool completely while you prepare the filling.
For a quicker option, you can use your favorite store-bought vegan pie crust.
Make the Chocolate Filling
Place the dairy-free chocolate chips in a microwave-safe bowl. Heat them in 30-second intervals, stirring thoroughly after each interval, until completely melted and smooth. This should take about 1½ minutes, depending on your microwave.
Allow the melted chocolate to cool for a few minutes before blending.
Add the melted chocolate, silken tofu, almond milk, and granulated sugar to a blender. Blend until the mixture is completely smooth, creamy, and free of any lumps.
Fill the Pie
Pour the chocolate tofu mixture into the cooled pie crust. Use a spatula to gently spread the filling into an even layer and smooth the surface.
Place the pie in the refrigerator and chill for at least 2 hours. The filling will gradually firm up as it cools, giving the pie a rich and creamy texture that’s easy to slice.
Add the Topping
Once the chocolate pie has fully chilled and set, spread or pipe coconut whipped cream over the top.
Finish with a sprinkling of chocolate shavings if desired. You can also leave the pie whole and garnish it before slicing, or add a small dollop of whipped cream to each individual serving.
Serve chilled and enjoy this rich, creamy chocolate dessert.
Tips and Tricks
- Let the melted chocolate cool for a few minutes before blending it with the tofu.
- Blend the filling thoroughly until completely smooth. This helps create a silky texture without any tofu lumps.
- Make sure the pie crust has cooled before adding the chocolate filling.
- Give the pie enough time to chill. At least 2 hours is recommended, but chilling it overnight gives the filling an even firmer texture.
- Use good-quality dairy-free chocolate chips for the best chocolate flavor.
- If the filling seems too thick while blending, add the almond milk gradually rather than adding too much at once.
- For a cleaner presentation, chill the pie overnight and use a sharp knife to cut each slice.
Serving Suggestions
Serve this chocolate pie cold with a generous spoonful of coconut whipped cream on top. For extra flavor and texture, sprinkle each slice with chocolate shavings.
You can also add fresh strawberries, raspberries, or blueberries for a fruity contrast. A light dusting of cocoa powder or a drizzle of melted dairy-free chocolate can make the dessert even more indulgent.
For special occasions, serve individual slices with a few fresh berries and a small scoop of dairy-free vanilla ice cream.
Storage
Cover the pie tightly with plastic wrap or place it in an airtight pie container and keep it refrigerated. It will stay fresh for about 4 to 5 days in the refrigerator.
For the best texture, keep the whipped cream topping refrigerated as well. If you’re preparing the pie ahead of time, you can add the whipped cream and chocolate shavings shortly before serving.
The pie can also be frozen for up to 1 month. Wrap it securely to prevent freezer burn, then thaw it overnight in the refrigerator before serving. The texture may be slightly different after freezing and thawing, but it will still make a delicious chocolate dessert.
